3 Fun Pink Drinks for your Hen’s Night

For those of us planning a special Hen’s night for our best friend, sister or even for yourself, here are three eye-catching drinks to serve to your guests that are sure to impress!  Because we all know someone who is expecting or who can’t consume alcohol, we have included an alcohol free recipe too! Enjoy making them and serving them up!  Happy Hen’s!!

Strawberry Pina Colada Lava Flow

This cocktail is named ‘Lava Flow’ because the strawberry rum rises to the top of the coconut cream, leaving a lava like appearance.

240 ml Malibu Coconut Rum

350g frozen strawberries, partially thawed

1/2 cup lemonade

300ml pineapple juice

240 ml coconut cream

1 banana

2 cups crushed ice

Fresh pineapple pieces for garnish

Strawberry Pina Colada

In a blender, combine thawed strawberries and their syrup, Malibu, and lemonade and blend until smooth.  Run the mixture through a fine mesh strainer to remove strawberry seeds.  Rinse blender.  Combine coconut cream and pineapple juice in blender and blend for 1 minute.  Pour into a cup and set aside.  Place the ice and banana in the blender and blend well.  Add the pineapple and coconut mixture and blend again until frothy and smooth.  Set aside.

Fill 2/5ths of a champagne flute with the strawberry rum mixture.  Tilt the glass and very slowly and gently pour in the pineapple, banana and coconut cream mixture making sure that the mixture slides down the side of the flute to the bottom.

Serve chilled with pineapple chunks to garnish. Enjoy!

Cranberry Margaritas

A gorgeous drink featuring the tart cranberry!

1 1/4 cups cranberry juice

1/2 cup sugar

1 1/2 cups fresh or frozen cranberries

3/4 cup fresh lime juice

3/4 cup tequila

½ cop Cointreau

3 cups crushed ice

Pour ¼ cup cranberry juice into a shallow bowl. Spread 3 tbsp of the sugar onto a shallow plate.  Dip the rim of the wide-mouthed glasses that you intend to serve the margaritas in into juice, then sugar.  Set glasses aside.

Reserve 12 cranberries.  In a blender, blend the remaining cranberries, cranberry juice, sugar, lime juice, tequila, cointreau and ice until it’s a slushy like consistency.

Divide among glasses and garnish with reserved cranberries, skewered on toothpicks.

Sparkling Raspberry Lemonade

A delicious non-alcoholic drink.

350g fresh raspberries (frozen and thawed ok)

1 cup chilled fresh lemon juice

1/2 cup cold water

1/2 cup sugar

1/2 cup honey

1 litre sparkling water

Fresh mint and ice to serve

Place raspberries in a food processor and pulse until well pureed.  Place through a fine mesh strainer and into a bowl.

In a large jug, whisk together water and sugar until the sugar has dissolved.  Pour in honey and mix until blended.  Stir in raspberry mixture and lemon juice then pour in sparkling water and stir once.  Serve in glasses with fresh mint and ice.
